Interior of a modern brewery

The Soul of Beer
Reveals Itself to You

Step through the doors of our brewing sanctuary in Ensisheim. A sensory immersion between ancestral tradition and contemporary boldness.

More than a Visit, a Human Encounter

In 2026, craftsmanship has never been so precious. In Ensisheim, we have chosen to open our brewery doors wide to share with you what drives us every morning: the passion for raw ingredients, transformed by human hands and the magic of fermentation.

Forget cold, formatted industrial tours. Here, you enter a living space. You will smell the sweet scent of crushed malt, the humid heat of the mash tuns, and the herbal fragrance of hops freshly thrown into the boil. It is a human-scale experience, where the brewer himself sometimes leaves his barrels to tell you the story of each recipe.

Whether you are a curious neophyte wanting to know how we go from barley to glass, or an enlightened enthusiast looking for technical details on yeast strains, our guides adapt to your level of thirst... for knowledge!

The Journey from Grain to Glass

Explore the key steps you will discover during your journey within our establishment.

01

Milling

It all starts with the selection of the best malts from Alsace. We will explain how we break the grain's husk to release the starches without reducing everything to flour.

02

Mashing

The grain meets precisely heated water. This is where enzymes come into play to transform starch into fermentable sugars. A step requiring patience and thermal control.

03

Boiling

The wort is brought to a boil. This is the moment to add the hops: bittering hops at the start, aromatic at the end. You will discover the incredible diversity of local varieties.

04

Fermentation

Yeasts spring into action in our stainless steel tanks. They transform sugar into alcohol and carbon dioxide, while contributing unique fruity or spicy esters.

05

Conditioning

Time does its work. The beer rests in the cold to mature, clarify naturally, and develop its aromatic complexity. The secret to Alsatian drinkability.

06

Packaging

Bottling or kegging? Discover our production line and the importance of impeccable hygiene to guarantee the quality of every drop.

Frequently Asked Questions (FAQ)

Are the tours suitable for children?

Absolutely! While the alcohol tasting is reserved for adults, children are fascinated by the machinery and smells. We offer artisanal fruit juices for them at the end of the tour.

What is the maximum number of people per group?

To ensure a high-quality experience and fluid exchange, we limit groups to 15 people. Beyond that, we split the group with two guides.

Can I buy beer on site?

Yes, a shop is available at the end of the tour. You will find our full range, limited editions, as well as products from our partner La Cave du Trèfle.

Is the brewery heated?

The production area remains cool for beer storage. We recommend bringing a light sweater, even in summer, as the conditioning cellar is kept at a low temperature.

Can we eat on site after the visit?

Yes, you can extend the experience at the Restaurant La Flamme located just a few steps away, which offers exceptional food and beer pairings.

Is it accessible to people with reduced mobility?
