Microbrasserie La Passerelle

Pure craftsmanship in the heart of Alsace: where water, malt, and hops create unforgettable memories.

Living Tradition

An Alsatian Heritage Reinvented in Ensisheim

In this year 2026, Microbrasserie La Passerelle stands out as the jewel of the brewing crown in Ensisheim. Born from a passion for raw products and a love for the Alsatian terroir, our brewery doesn't just produce liquid; it distills emotions.

Anchored in the prestigious Esprit d’Alsace site, La Passerelle is much more than a production unit. It is the meeting point between the ancestral expertise of the Brasseries de l'Ill and a modern vision of local consumption. Here, each brew is an ode to patience and precision.

"Our mission is simple: to restore the prestige of local, living, and generous beer."

Excellence in Four Pillars

Uncompromising Quality

Our beers are unpasteurized and unfiltered. Why? To preserve the integrity of the aromas, the liveliness of the yeasts, and the smooth texture that is the signature of La Passerelle. It is a "living" beer that requires impeccable fresh logistics, ensured by our parent company Les Brasseries de l'Ill.

More than a Drink: A Vehicle for Conviviality

The world is changing, and so are the ways people meet. While the traditional bistro was the pillar of villages, the microbrewery is today's new social forum. At La Passerelle, we believe in "drinking less, but drinking better."

This vision comes to life through our synergy with Restaurant La Flamme. Imagine enjoying a freshly tapped Ansa Blonde, directly connected to our tanks, while savoring a sauerkraut or a wood-fired flammekueche. It is this overall experience that we cultivate in Ensisheim.

By collaborating with Aux Délices du Houblon, we also ensure that our products reach enthusiasts wherever they are, creating a network of sharing and taste education throughout the region.

From Grain to Glass: Our Process

1

Crushing

The barley malt is precisely ground to release the starch without destroying the grain's husk.

2

Mashing

Mixed with heated water, the malt releases its fermentable sugars. This is the stage where the character takes shape.

3

Boiling

The wort is boiled with Alsatian hops. This is where bitterness and floral aromas are extracted.

4

Fermentation

For several weeks, our yeasts work in silence to transform sugar into alcohol and natural carbon dioxide.
